Dining Hall Hacks

Sometimes in college you have to be creative outside of the classroom.  You’re hungry and need something quick, but no time to sit down for a meal at the dining hall.  Here are some ideas to throw together for a quick bite to go.

Yogurt Parfait

Spoon some yogurt into a cup, and layer up.  Yogurt, then fruit, yogurt again, then granola, more yogurt then nuts.  Get a nice balance of carbohydrates, protein and fats.

Taco Salad

Grab a bag of Doritos, toss in some ground beef lettuce, tomato & cheese-yep, right into the bag!  Crunch it up and insert spoon.

Rice Krispie Treats

Melt 1Tbs butter in microwavable bowl.  Add 4 marshmallows and cook for 20 seconds.  Pour in 1 cup Rice Krispies.  Stir and let cool.

Waffle Maker

Plain waffles…sure, always good. For variety, grab some fun add-ins…peanut butter, nuts, sprinkles, bananas, bacon, anything.  Brunch on the go.

Egg Salad

Make it healthier by using 2 hard-boiled egg whites and 1 hard-boiled whole egg.  Mix with 3 tablespoons of Greek yogurt and 1 teaspoon of mustard.  Add a sprinkle of salt and pepper.  Mix the ingredients.  Add to bread or lettuce.

Quickie Quiche

Fancy & high protein, make and take in the same mug.  Combine 1 raw egg, 2 tablespoons of cream cheese, and 1 teaspoon of Dijon mustard in a microwave-safe mug. Take a slice of bread and two slices of deli meat (turkey, ham, whatever) and tear into small pieces and toss them into the mug. Add some dashes of spice (salt, pepper, thyme).  Microwave for about a minute-and-a-half until egg is cooked.

Apples with peanut butter or nuts is always an easy go to snack.
